You can use Vizlib Library extension. There are so many provisions in that extension.

Header column of which chart Pivot/Straight table?

With default Pivot table in Sense, you can't change the header colour.

So, you have to find an extension Pivot table which will have options to change background/text colour.

Hey, Vizlib is for straight table and other charts but not for Pivot. Sorry for that, I forgot to mention.
