Can a RIM node be added in more than once Central Node ?

Can a RIM node be added in more than one Central Node.

Here One Central node is Prod and another central node is DR. So when Prod is down all the RIM nodes under Prod Central has to point to DR Central

You don't need to add the rim node to DR. Once the DR becomes active central node, the rim node that was associated with primary central node, beocmes rim to the new central node automatically. Only thing you have to ensure that while configuring the setup, configure the 'Failover candicate node' (that is DR as you explained) properly.

Does that mean while doing the QS installation for DR setup do I have to use join Cluster to Prod option rather than Create Cluster ?
