Hello,
Is it possible with Talend Big Data to attach a document ( for example : a pdf file ) in a couchdb document ?

I could not use this way because your example was on Oracle and couchdb is not a sql database.
I succeed with Rest protocol
cf screens:
Here :
192.168.56.95:5984 : is the couchdb server adress
b1 : is the name of a couchdb database
7cd1966ff96256b82182ffa209000112 : the id of the doc on which I want to attach a file
34-5e32f1ba0c3af4d882de9f03f1d81104 : the rev of the doc on which I want to attach a file
