Is a manual available that explains the syntax of formulas to be used in set analysis ?

Open qlikview, go to Contents -> Help, search for set analysis. That will give you syntax and some example of its use.

There are many resources in the web (got together this list by QlikCommunity community managers), in the Reference Manual that is installed in the Documentation folder, in the Docs section of the QlikCommunity in the QlikView training portal, and of course, in these forums.
