There is step by step in the manual. Have not seen any specifics for inital release in Qv11 to latest but the normal is backup, uninistall old server, install new.

It involves just downloading the server installation file from the Qlikview site, and install it on the server, allowing it to reinstall the last version during the installation of the new version, and restart the server at the end of the installation.
