In join you are creating a table by matching rows by field names.

In ApplyMap you are adding information to a table by smoking up the first matching value in another (the map).

Join: combine rows from two or more tables, based on a related column between them

ApplyMap: This is a bit like a Vlookup, it will generally take 3 Parameters. With 2 parameters it is quite powerful, but if you use the 3rd parameter it is even more useful.

That last link is a presentation by Henric Cronstrom regarding the QIX Engine, it is about 40 minutes, well worth your time, as I think it will help put you in the right frame of mind when trying to figure out your data models in order to make things as efficient and well performing as possible.
