You can use OnOpen Trigger to set the value of your variable as 'Processed'

You can't really mark it.

Go to Settings>Document Properties> then the Triggers tab.

5. Select Trigger OnOpen

6. Click on 'Add Action'

7. List 'Action Type'

Select External

8. List 'Action'

Select Set Variable

9. Box 'Variable'

Write vCategory

10. Box 'Value'

Write Processed
