You could use a calendar and set flags for the weekdays, I would even tell you that you could add the working days. and in the expressions use set analisys with using this flag that you created.
Another one that occurs to me knowing how many days are from Monday to Friday, find a way to add the dedecimals, this represents the time and so you would have the days you need with the hours.
