This makes absoutely no sense - in SSRS or any other tool I can sort values from highest to lowest but I cannot find a way to do it in Qlikview.
I have expression fields and I need to call-out values by sorting them. How do I do this?
You should be able to just sort using the sort order set in the sort tab of the chart properties. If interactive sort is allowed in that tab, double clicking a header will sort the column, flipping asc / desc sort order.
However, there are some chart expression functions, e.g. namely the chart inter record functions like rangesum(), that disable sort of y-values. Do you use any of these functions?

For straight table
Goto Chart Properties -> Sort -> Select expression and give the required sorting (Ascending/Descending)
In Bar chart etc
Goto Chart Properties -> Sort -> Select "Y value" and give the required sorting (Ascending/Descending)

and select dimension
then check y value and select descending
