I want the central node to run the Proxy service, the scheduler service, the repository service, scheduler service, the printing service, and the RIM node only run the engine service.

All services run the central node, you just can't select some of them. Instead you can select them on the RIM node.
Normaly the proxy node balance the load over the engine or use just some of them. You can write a security rule to force some app on specific engines
