Have you looked at the ref manual for the connector that are available on the download site? I think it give a good explanation how to set it up on both sides and connect to access the data.
There are several way to connect to SAP and different connectors to use depending on what you are trying to achieve (the QlikView product "SAP Connector" should really be plural). I would recommend you get in touch with your QlikView account team and they can help you with your specific needs.
