Creating Pivot Chart with Dates on BOTH X and Y axis

Good Day!

I am trying to figure out how to create a pivot chart with date ranges on BOTH the X and Y axis.  I want to show inventor by date manufactured and expiration date.

I only see data from 2020 within Expiry Date?

I would like to use the information to create a pivot table like the one in the excel file and a pivot bar chart if possible.  Thanks in advance for the assist.
