Is there a way to view a list of all dimensions used in objects and edit them using "Find/Replace", similar to the "Expression Overview" for expressions?
No, there isn't. You can use the Document Analyzer to get an overview of which fields are used in which object. But you'll have to change the dimensions in the objects manually. If all you want is to rename fields, not replace them with other fields, then you can do that in the script.
