if i have understood your requirement, you can achieve this by using trigger. best way to suppport is your sample application. please upload if possible.
The first and third are actually the same for most practical purposes. No selections give pretty much the exact same behaviour as selecting all values. It just looks differently.
But if you don't like too much green you can add a Select in Field action to OnSelect trigger of the field.
