No Limit.
It depends on the Server Memory Size.

Plus:
There's a limit depending on the type and number of license CALs you have. The more dashboards you have the more liceses you may need (although this isn't an issue if you're using Named Cals)
CPU is also a factor depending on the Dashboard structure. (very wide tables are more CPU hungry)
A final note is QVW scheduling which is also linked to the number of processors you have. You can't run more concurent jobs than you have processors.

If SBE then you can use
25 named Cal and 100 Document Cal
IAS 1 Application
QES 3 Application
EE
Unlimited if you have sufficient CAL and sufficient CPU and memory it depends.

There is no limit how many applications can be published as long you not running a license with document limitation (for example IAS). You can publish thousands of applications on a SBE with 5 user CALs and then the only limitation is how many docs can be opened before you reach the Hardware limit (CPU / RAM)
