How would I know if I am using the Qlikview Webserver or IIS? And what is the difference between the two?

Check the services, see if QlikView WebServer service is listed, if not you are likely using IIS. There are some scenarios where both are installed but you could also check your server manager to see if you have IIS installed as a role.
It really depends on what you are trying to accomplish to determine which one might better fit your needs. In the simplest deployments they are the same. The major difference is with Web server QlikView hosts and manages the website, with IIS obviously the IIS role does. It takes a bit more manual setup to point the IIS site to QlikView but in the end can allow for a bit more flexibility, especially if you are already familiar with IIS.

I'd suggest using QV Web Server unless one really needs to use some extra function of IIS.
Yes it looks like we are using the QV Webserver as this service is showing as running when looking at the list of services.
