As per my understanding you have different products under different category, so your first pivot table is right. If you want the sum as the second one with category listed, then it won't show up for all categories.
You were almost there! You just need to click on Product in the table and drag it up and to the right to make the Product show in columns. Then you can see the totals by Category and Product as shown in the example.
