Find if date/time field is between two values

I have a Date field (with time stamp) and need to do the following (my date is formatted like 9/13/2006 8:26:17 AM😞

If Time is between 3:00 AM and 11:59 PM, = same Date.  

If Time is between 12:00 AM and 2:59 PM,  = Date-1

Looking for some help on how to derive a value if the time falls between 3am and 11:59pm or if it falls between 12am and 2:59pm.

I think your requirement are not unambiguous.

Noon (12:00 in 24 hours time system or 12:00 PM) should be assigned to which date?

Thanks for the response. I think it should be like this

If Time is between 3:00 AM and 11:59 PM, = same Date.  

If Time is between 12:00 AM and 2:59 AM,  = Date-1

Anything you can provide on how to assign a value if a time is "between' these times would be very helpful.
