From the QV management console (our version: 11.20.1) we can attach a defined attribute to our docs, does anyone happen to know where a documents (qvw) attribute is stored once attached?
Is it even possible to access this information?

That information should be in the .meta files. I don't know of any tool that can read the .meta files other than the QMC management console.

...where Anders Schaeder shows how to read the .meta file into QV and you can kind of scrape your required attribute info from the load data:
LOAD
'Finance_Reporting' as Document,
@1 as User
FROM
(txt, codepage is 1252, no labels, delimiter is spaces, msq, filters(
Transpose()
))
Where left(@1,1) = 'Q';
I think that will do for what I was looking for for now
