I following data:

Customer

Diameter

Length

Shape

Stock

Production quantity 

Production date

How can I set the formula, so that my stock does not change with the production date selection (because stock is as of today, regardless of the production date/month)?

Whatever the formula for stock is, add {< [Production Date] = >} to it. Example:

Sum( {< [Production Date] = >}  Stock)
