TOS 6.2.1, Software site configured: "http://update.talend.com/Studio/8cfd2bb2f74f1233ca5a7bc8fe6dffa3/6.2.1"
As you can see it does not work: "There are no categorized items"
What other remore site could I configure, please?

There are 2 things we do:
- Patches - which are for identified bugs. Patches for bugs are generally provided by our support team.
- New features are generally added in new version (even if it is minor like from 6.5.1 to 6.5.2). In that case, it requires an upgrade. TAC and Studio always needs to be upgraded in sync. JobServer has a compatibility matrix here https://help.talend.com/reader/Vf4kncNeAlVQT~Kv9TVUVQ/cwUmhGwqylI1QREUCrhrsw so that you can stage your upgrade and don't have to bring all your services down.
Our Talend Cloud platform does not need the studio to be upgrade all the time when we push quarterly updates to the cloud platform. However, I generally recommend that at least once a year you upgrade the studio to benefit from new features in the studio for cloud customers.
What are you trying to do? If you are trying to get a latest version of the studio, you need to download it from https://www.talend.com/products/data-integration/data-integration-open-studio/
It will not update like eclipse update for the TOS.

I'm not trying to upgrade the Studio, I expected to update/upgrade specific Studio components, if any.
So, as for your answer, it seems correct not to have anything available, specifically for the Studio (but not the Studio itself), from the update.talend.com. Can you confirm?

Correct, we do not push updates to components within TOS through update site. Remember the TOS also does not get patches for CVE etc. Only subscription paid products get patches.
Higher version of TOS, like 7.1.1 will include all previously validated and validated patches since 6.2.1 for example.
