Memory calculation for a new app

How would you calculate the memory usage when you are launching a new app into the production. And what are the steps you will take and how would you measure. For suppose if i have document which is 1GB size and sclaed to 100 users.

Open the doc on your PC and look at the RAM (task manager)

Then add 8-10% of the RAM size for every concurrent users
