QVS service is shown as Disconnected in QMC, and QlikView Server is running in Windows Server Task Manager.
I don't know the cause.
Why is one running and the other showing as Disconnected?
Which Status is correct?
In the end, when I restart the service, both come out as Running.

You get disconnected if the QMC can not contact a QlikView Server. So QMC could reach one server but not the other.

As Maria stated, the QVS will show as disconnected in the QMC if the QlikView Management Service (QMS) cannot communicate with the QlikView Server Service (QVS). To start, you should review the QMS logs and the QVS Events logs for errors/warnings. The task-manager showed that there is a process (qvs.exe) which is running within the OS. It couldn't know if this process is currently capable to communicate with other (Qlik) processes. But the qmc would show if there is an active and valide communication-process between all services.
Causes for a failing communication are often any timeouts or lost authentications between the services and/or the OS usually caused from a too high workload within the environment.
