Button to select value

How can I create a button that selects all the possible values of a field except for one?

Assign two actions to the button. First a Select in Field action to select one value. Then add a Select Excluded action for the same field to invert the selection.

Or use a Select Possible as the first action and the use a Toggle Select action to deselect one value. That will work unless you already have selections in that field. Then you need to add a Clear Field action as the first action.

That is exactly what I did but it does not work, my field is numeric and I want to select all values that are not equal to 1

Click on the Use advanced editor link at the top right of the reply window. In the advanced editor you can find a link at the bottom right to attach files.
