the interactive sort will allow the user to change the sort by double clicking on the column name, in your case the sorting is done based on total sales ascending order, now if the interactive sort is checked you can go to your chart and double click on the sales column (on the label name) and you will see that the sorting will change from ascending to descending. if you want to disable this feature you should uncheck the interactive sort option.
