PI Day PI(e) Recipes!

What is PI day, you ask?  Only the best holiday of the year!

Each year, my family and I celebrate the mathematical wonder that is the number PI by eating nothing except PI(e) for a whole day.  March 14th. (The first digits of pie are 3.14.)  Even better, this year is the 15th year and guess what the next two digits of PI are…. That’s right!  15.  How exciting is that?   That means that this year’s PI day 3.1415 is the most special PI day of our lives!

As we celebrate this year, I thought it would be great to get everyone’s favorite PI(e) recipes together into a little PI Day cookbook.

Shepherd's Pie

PIE DOESN’T HAVE TO BE SWEET.  STAY ON THEME FOR PI DAY WITH THIS SAVORY DINNER FAVORITE.

INGREDIENTS

Bottom Layer

  • 1 tbsp olive oil
  • 1 large onion, finely diced
  • 1 lb ground beef
  • 1 lb lamb
  • Salt and pepper to taste

Middle Layer

  • 2 bags of frozen peas, carrots and/or corn

Gravy

  • 3 -4 sprigs fresh thyme, finely chopped
  • 2 tbsp flour
  • 1 tbsp butter
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 2 cup chicken stock

Top Layer

  • 6 large potatoes for mashing (Russet works great)
  • ½ stick of butter
  • ½ cup of milk
  • Salt and Pepper to taste


DIRECTIONS

  • Pre-heat oven to 200C/400°F.
  • Make the mashed potatoes first using the ingredients in the Top layer section above.  Make sure that you make them very smooth.
  • Saute onions in the olive oil until cooked. Add meat and brown adding salt and pepper to taste. Drain the fat from the meat and add to a large oven safe pan
  • Add the frozen veggies on top of the meat in a second layer
  • Add the chicken stock to the pan to deglaze and then wisk in the other ingredients in the gravy list above until well blended.  Pour gravy over the veggie layer.
  • Add the layer of mashed potatoes to the top and then bake for about 20 minutes.  The potatoes will get golden brown on top.

Chicken Pot Pie

Total Time: 1hr 45mins

Prep: 1 hr

Cook: 45 mins

Ingredients:

    1 cup potato, diced

    1 cup onion, diced

    1 cup celery, diced

    1 cup carrot, diced

    1⁄3 cup melted margarine

    1⁄2 cup all-purpose flour

    2 cups chicken broth

    1 cup half-and-half

    1 teaspoon salt

    1⁄4 teaspoon pepper

    4 cups chicken, cooked and chopped

    2 pie crusts (either store bought or your own recipe)

Directions:

    Preheat oven to 400°F.

    Saute onion, celery, carrots and potatoes in margarine for 10 minutes.

    Add flour to sauteed mixture, stirring well, cook one minute stirring constantly.

    Combine broth and half and half.

    Gradually stir into vegetable mixture.

    Cook over medium heat stirring constantly until thickened and bubbly.

    Stir in salt and pepper; add chicken and stir well.

    Pour into pie shell, take other shell and place on top (without tin) - seal around edges

    Cut slits to allow steam to escape.

    Bake for 40-50 minutes or until pastry is golden brown and filling is bubbly and cooked through.
