QlikView desktop readily integrates with two version control systems: TFS by Microsoft and svn (open source). git works too. In QV Desktop, check File->Source Control. To configure the selected VCS, see Updated Guide to QlikView and Source Control (TFS & Subversion)
No, Server/Publisher cannot act as Version Control services. You'll have to install and configure a separate VCS service to store and manage your documents in a central repo.
You can not do version control through server / Publisher.
You can use git/SVN
