Use case of "Select in Filed" and "Set Variable"

Hi All,

Sorry for this very basic question. I have gone through many links and couldn't understand when to use  "Select in Filed" and "Set Variable" in UI

Could someone please explain in detail about  "Select in Filed" and "Set Variable" with an example would be great.
