I do not think that Pivot table in Qlikview provide such tuning. Well You can expand the dimensions and collapse those not needed and save the file it that mode.
It's not possible - pivoting is a global option and there is also no function to get the informations if any column is expended or collapsed. But I think you could get good visualizations and usability if you used several objects for it - maybe combined within a container.
