In Pivot Table: Include all values in Total, but do not display all dimension values?

I know it's not a recommended practice, but . . . I have a requirement to include counts of all dimension values in the table Total without displaying all of the field values in the table.  I drafted the following to illustrate . . . 

In the TO table, the Neither option is not displayed, but the total counts remain the same. Basically, the total reflects the number of people surveyed while the details reflect the number count of preferences for only Vanilla and Chocolate Possible?
