Filter Pane Field to Show 1 Item but Without another Item

I've had some users ask for the ability to filter with one product and without  another product from a field on a Filter Pane.

So, my example is I have a Product field where they want to see all clients that own Product1 but don't own Product2.  What's the easiest way to provide my users this ability?

What you need is a Advance Set analysis.
