Yes you can .
Refer Using Subfield in Applymap in Qliksense | Qlik Community
when you say yes, you talk about "applymap" and not mapping table ?
In applymap, if you see link mentioned,
you can concatenate multiple field into one and then used in Mapping Load.
So in short Mapping load allows only 2 columns.
but alternative for Multiple Mapping Tables is combining Multiple columns and putting as one in Mapping Load.
And in Applymap() you can use Subfield to separate one column into multiple fields
