Has anyone successfully managed to connect to a minIO using AWS S3 Connector or Apache Drill

This is currently not supported.
AWS S3 connector is only to be used for AWS S3. As you can see in this article, Qlik Web Connector Amazon S3 does not support connections to third party S3 object storage:

and the Qlik Apache drill connector supports apache drill versions up to 1.16.0

I would suggest you to create a post in our ideation program (https://community.qlik.com/t5/Ideation/ct-p/qlik-product-insight) asking to add the possibility to connect to minIO.
