Script

Does Qlik allow for a script to be ran that can shutdown the Qlik Sense services on all Nodes? Or do you have to manually do it one by one? Just curious..

Yes, Qlik Sense does allow for this and typically this is done through a PowerShell script.  See Qlik Support article Qlik Sense:  Sample PS Scripts to Stop and Start Services.

Can I run this from the central Node to affect all other Rim Nodes?

Shawn, the sample script is a Windows based PowerShell script that would be run outside of Qlik Sense and would need to be run on each individual Windows server hosting Qlik Sense services.
