I am attempting to colour different cells ( containing only text ) in my pivot table using the custom format cell option. However using the option it colours all of the cells in the particular column rather than the specific one I selected.
Any ideas ?

Why don't you try it with Background Color expression if you only want to color particular cells?
Yes that's what I'm doing but it ends up colouring all of the cells rather than just the selected one
What condition (expression) are you using?
Only have the option of selecting 'current expression' or all expressions or all expressions / dimensions which is why Im guessing it's colouring all of the cells belonging to that expression. Is there a different option I should get to colour only one particular row ? Is this type of formatting perhaps only limited to certain types of charts / tables ?

That is how Custom Format Cell works. If you want som specific row highlighted you will have to use either expression / format options or Visual Cues tab....
