Does anyone know if you can put more than one line when the caption that appears next to the graph is too big?

How the "can not change" looks like? I guess it is not disabled, but nothing changes in the chart, and when you go back to properties your changes are reversed. If this is the case, try to open ypur application in another QV version, try to make the change, and save.

In "Legend Settings" First click on "Wrap" check box and then you will able to select the multiline. see the screen shot.
