Considering I have a standard QVW file (a QlikView Project), but I have a lot of data inside this project, so my project is slowing down when I am looking over the sheets (switch).
Is the QVD format only intended to be quicker for loading data at the project's loading step (before runtime) OR... loading the data from a QVD file will make my project more fast at runtime ?

qvd format could help you at the load (reload) time
at runtime (user accessing the dashboard/document) qvd does not matter

My understanding of what you're saying is, your application is slow when you navigate between sheets (correct)?
If that is the case, the problem is not with the QVD (yes you're right, qvd is fast for loading), the problem might potentially be in the calculations taking place in the UI of your application.
A good review of some of the functions and calculate in the objects in UI will do you good and optimised your application.
You might want to move some calculations to scrpt.
Please note, without access to the application, this is my best guess.
