1. I have a qlkview document getting data from a production server hourly (consider getting of the production server - that is another question!)
2. In the mornings or when requested I run another qlikview document which gets data from the production server and creates a qvd file.
In some documents a daily update is fine - that is why I use 2.
Would it cause an extra load on the server if when the production server was polled hourly it also created a qvd document?
I know that for the future I will need to look at some other method and I will need to look at incremental loads - but for the moment I just want to deal with this question.

It depends on ow you design your data model.
If the hourly data is designed to incrementally insert data in one of your files, you can create tasks to extract and data hourly in the production server and update your data model hourly.

that will certainly be something I will need to look at, but meanwhile will it "hurt" if I create a QVD file at the same time as the server is polled hourly?

As per your requirement you can do number of incremental loads, even hourly(provided your load is taking less than 1 hour time).
The best way to do this is... to schedule the load through windows batch file by executing the following script...
"C:\Program Files\QlikView\Qv.exe" /r "D:\Filename.qvw"
