for interactive sort, if you want to sort by field1, field2, field3

start with field3, then field2, then field1

if I correctly understand then you go to Chart properties > Sort and then set the priority order for columns and press apply.

I was talking on interactive (user) sort

If you want to sort by a,b,c

First sort field c (ascending or descending), then field b, then field a; quick answer, reverse the sort order

If you want to sort when you make the document (no interactive/user sort) follow QlikRajan's answer
