Compare changes in a datasource after a certain time

How I can compare changes in my datasource after a certain while?

Let's say there is a table with 3 columns like in this small example.

At time=t0 we have this result:

After a while at time=t1 some values have changed (in this case amount and price).

I think I need a temporry table where I can store a status or sth like that.

But which components do I have to use to compare the changes?

In the output I only need the rows which were changed.

what is compare changes for you?
do you want to store data?
did you have update time?
