Currently, you can only sort in edit mode, by changing the sort order in the Sorting tab.
I have opened a feature request on this in our system, to allow interactive sort while in view / analysis mode.

Using expression we can sort pivot table only up to max 3 levels , you can not sort like straight table like
using interactive sort option in pivot.
