The native map chart: no the tooltip can't be changed, we hope to add custom tooltips for all charts soon.
QGA chart layer: you can write a complete new custom tooltip. You can't add a row to the the default tooltip for chart layer.
For both: a trick would be to do size by the same measure and set the Label to "Tot: "
Modding the share expression label to ='Tot: ' & sum(val) will get the total sum for the whole app and not at the location unfortunately.
Trick for the QGA layer, make a Sense table and embed that in the tooltip using:

Hi Vishnu - I agree with Patric - if you are using the Qlik GeoAnalytics Map extensions you can create a custom info bubble - I build an example and video based off the previous link Patric sent.
