Promoting an App through environments

Hi there.

I have 3 environments with the same database schema, these are Dev, UAT and Prod.

The schema has some poorly worded field names and values in fields, so I am using a load mapping script to rename fields and values. 

How can I copy an app from Dev into UAT (connecting to the UAT db) and maintain all of the customisation?
