What are the advantages and disadvantages of using "Map... using" versus "Applymap"?

I stumbled upon the function "Map" and I understand it as a way of doing massive applymaps operations. If that's the case, what are the differences and advantages/disadvantages between that and the applymap statement?

Applymap is applied within a table as it is loaded, and can include expressions to calculate fields, whereas the map is applied across all tables.
