Do I have to import all of the data generated from a given Gold Client export?

From a technical perspective, no.

In isolated use cases it may make sense to import only some of the data and as such, Gold Client provides the user this level of granularity; however, it is very important to keep in mind that a number of data dependencies among the data set that was exported is likely to exist and so if you choose not to import all of the data that this may have an impact on the data integrity. If you find that to be the case, the next steps would be to perform another import but with all the data from the export.

If you only want to import some of the files, you must drill down within the various Import Control screens to reach the one that lists the individual Data Types; from this screen it is possible to select which ones to import. 

Be advised that it is not possible to select individual files for import (files are written for each table); the Data Type is the most granular level that can be selected by the user.
