Does Nprinting on demand only run pre-built reports or will it somehow generate what's on a sheet on the fly. If it only run's pre-built reports, is the main feature here that it will run nprinting reports with user defined filters on the fly when needed?

Nprinting On demand generates report that are prebuilt in Nprinting.
If you want the current sheet to be generated then in Nprinting you can build a Sheet as an image into your report. that way the sheet gets generated.

Yes, Qlik NPrinting On-Demand works on pre-build reports, and only on pre-build. I mean, you must first create the report templates and after you can run them via On-Demand.
The reports that you want to run via On-Demand must have the check box "Enable On-Demand and API report generation" flagged otherwise they will not be visible via On-Demand.

Our users want to be able to create personal sheets and then dump what they've created into a powerpoint template. I didn't think this was possible but just wanted to be sure I wasn't missing some functionality of on-demand reporting.

On-Demand lets user to run report generations when they want, without the need to wait for the schedule time. The reports must exist in Qlik NPrinting. On-Demand doesn't let you to create new reports or modify existing ones.
To create new reports the users must be "Developers". So they need to be trained in how report development works, than you could create a Qlik NPrinting app for each user, create the security role to let him/her to manage report templates, etc. Quite long to implement and maintain.
