I have this formula in "Date(Max({$<[Pay Period Record]={2}>} [Pay Period End Date]), 'YYYY-MM-DD')" which gives me an exact date , but when I try to add in this in nprinting Formula tab , it is giving me 45660 number

Ensure to always test your expressions by inserting them into Qlik Text box in your Qlik Application before using with NPrinting.
The formula shared by @Aurelien_Martinez seem accurate and should convert your text values to date format.

@Aurelien_Martinez provided you with one solution, another solution would be to apply excel cell custom date format using excel number formatting. which will display numerical value as date.
