Hello Team,
I had a DBA from source endpoint that increased the log retention time from 24 hrs. to 72 hours and he requested to confirm a UAT to see the changes looks good on the Replicate side? Is there a way to TEST the log retention changes?

If I understood correctly, you are meaning the transaction log retention. is that correct?
if yes, then you may try to startup a CDC ONLY task by timestamp, or LSN in SQL Server, POS in PostgreSQL, to see if you get 3 days ago data changes. Cetainly it's better to set target with 'Store Change' mode.
Please take note the slot in PostgreSQL should be created in 3 days ago, by Replicate, or manually.
