Currently i have the Pivot Table : Year and Customer (Dimensions) and Delivery Type (Expression), as well as the way you suggested but users not happy with this.

add a calculated dimension
if ("nameofyourfield" = 'Delivery Type A ' or "Nameofyourfield" = 'Delivery Type B', "NameOfYourField", null())
insert the name of your field wihtout the quotes and should work.

From your example, I understand that, Delivery Type A and Delivery Type C are the expressions and Customer & Year are the dimensions. But from here what you are going to limit the dimensions.
