Can anyone confirm if there is a limit to how many columns Qlikview can import from an excel document?
I've got a spreadsheet I am uploading which has 112 Columns and it always fails on the 100th column if I delete some of them.

There´s no such limitation.
Please find attached a qvw reading more than 500 columns.
Would you mind uploading the first line of your csv file?

I just tried the exact script on a blank Dashboard and it seemed to work fine!

Sounds strange. You could try loading the file using the wizard in the script editor (insert > load statement) to see if that identifies the problem.
It is really strange! If I comment out the 100th Column, it then picks up an error on the 101th column and so on!
share the sample file with us ...seems your missing some info here
Does your 100th have same name of another columns?
Columns into Qlik should be unique
